Will the 1.0.10 release be added to the fantastico installs, or should we install the 1.0.8 that's there and then upgrade on our own?

TCH has no control over when Fantasatico updates the scripts.

Welcome to the forum, paddingtonbear.
You have two options.
1. Install the version 1.0.8 and then go to joomla.org and download the appropriate patch package. Then just replace the files that are in your newly created joomla folder with those in the patch package.
2. Go to joomla.org and download the full 1.0.10 package and install it manually, which would be preferred.

Please submit a helpdesk ticket. 1.0.10 should have already been available on your server. (sorry for the confusion above. The moderators don't have access to check on the exact versions).

Your server is being updated now. If anyone else is having an issue please open a ticket with the help desk.

For those using Joomla!, I would STRONGLY encourage to frequently check their site for updates. Updating is relatively painless and usually takes only a few minutes.
